This job was posted by : For more information, please see: The Feather's Caf Sous Chef will be responsible for the smooth and efficient operation of all outlets during shift. Maintain log books; assist Executive Chef with necessary paperwork and any other jobs he may assign. Supervise and train hourly crew; assist in menu preparation, recipe making and yield tests. Ensure stocking and sanitation of department. Supervise the entire outlet food preparation staff. Responsible for hiring new team members, training, terminating, and issuing disciplinary action as required. Supervise all cooking operations: including methods of preparation and cooking, verifying portion standards, and able to cost food properly; Requires standing, walking, bending, pulling and reaching throughout the shift; Must be able to lift 40 pounds; High school diploma, GED, or equivalent. Five years hands on operational experience in food service operations with a large hotel/casino preferred.
